Lentil Salad

This is such a great salad, we enjoy serving this as a side with a form of protein or as a meal on its own.

It's full of fibre, antioxidants, nutrients and above all tastes delicious!

Ingredients:

1 cup of brown lentils cooked and cooled

2 radishes sliced

1 cucumber sliced and halved

1 red apple chopped

1 red capsicum sliced roughly

1 red onion sliced

Handful of mint roughly torn

Dressing:

Olive oil

Juice from one lemon

Pomegranate and orange slices to serve

Method:

Mix salad ingredients together

Add dressing and mix through

Top with pomegranate seeds and a couple of slices of orange to serve.

Serves 2 as a meal, 4 as a side.
