This week I have been feeling like I have been teetering on the verge of getting sick.
I'm not sure about you but I really don't have time for that!
On a serious note, I wanted to boost my immune system and have a nourishing meal that could support me and fill me full of nutrients this week so I wasn't knocked down with a cold.
I added bone broth to the recipe for it's gut health properties. 70% of our immune system resides just outside our digestive system so if our gut's are not happy, then our immune system will be affected.
Turmeric was added for it's anti-inflammatory properties and garlic and thyme were added for their anti-bacterial properties.
I felt so much better after having my dinner, and I had it for lunch the next 2 days and have been able to fight off whatever was trying to attack!
Immune Boosting Chicken Soup
1 Tbs olive oil
1 onion diced
300g of cooked chicken (ours came from a roast the night before)
2 carrots sliced
2 celery stalks finely diced
2 Tbs bone broth
2 Tbs turmeric
2 Tbs thyme
pinch of salt
pinch of pepper
1.5L boiled water
1 bunch of greens (spinach, silverbeet or kale shredded)
3 cloves garlic minced
1. Place olive oil in a big saucepan and once warm add onion and carrot and stir until onion softens.
2. Add bone broth, water, herbs and spices and bring to boil then simmer for 10 minutes.
3. Add chicken and greens and simmer for 30 minutes.
4. 5 minutes before serving add garlic.
The soup is delicious immediately or reheated for lunch the next day. It can also be frozen for when you are feeling under the weather.
** If you don't want to use bone broth, chicken or vegetable stock could be useful.
*** I would normally add celery also but we didn't have any!
**** I added some gluten free pasta in for a bit of extra oomph, but it's completely optional
