Carrot, Sweet Potato and Lentil Soup

We have been in meal preparation mode recently and with the weather being so cool, we are interested in making warming meals with lots of fibre and nutrients to keep us cosy, fulfilled and content!

This was a hit in our house and we have had it for dinner, for lunch leftovers and also as snacks throughout the week and it's still a hit!

Ingredients:

1 tablespoon olive oil (you can use coconut oil also)

1 brown onion

3 carrots

1 large sweet potato

3 tsp dried thyme

1 tsp chilli flakes

1 cup of red lentils

1 L of boiled water

salt and pepper to taste

Method:

1. Brown onion in big pot with olive oil for 1-2 minutes

2. Add carrots, sweet potato, thyme, chilli flakes, salt and pepper and stir for 1 minute

3. Add lentils and boiling water

4. Allow to boil then turn down to a simmer for 25 minutes

5. Allow to cool for 15 minutes before, blending using a stick blender or a full size blender until smooth

6. Enjoy with some crusty sourdough bread (if consuming gluten) and a sprig of parsley
