Colourful Bean Salad


Are you trying to work out what to serve on Christmas Day?

The meal does not need to be unhealthy and this salad packs a punch for your eyes and your tastebuds!

It contains a range of antioxidants, flavours, fibre and is quite delicious to be served as a side. It does not necessarily need to be limited to Christmas Day either, it can be used as a side or as a meal for anytime of the year.

Ingredients: 250g green beans 1 red capsicum chopped finely 1 green capsicum chopped finely 200g cooked red kidney beans (or 1 can) 200g cooked chickpeas (or 1 can) 1 can corn kernels (or 2 corn husks steamed) 5 mint leaves chopped finely A small handful of coriander chopped finely Dressing: 2 tsp Dijon mustard 1/2 cup olive oil 1/4 cup white wine vinegar 1 garlic clove crushed

Juice of one lemon Method: Chop ends of green beans and then chop into 3cm lengths Add to boiling water for 2 minutes on stove then drain and rinse with cold water Add remainder of salad ingredients to a salad bowl Stir in dressing when ready to serve

TIP - it's best to steam up green beans and mix all together on the day to ensure a vibrant colour!
