Movie Platters for Isolation

Updated: Apr 15, 2020

Morgan and I have been discussing how to keep things interesting whilst at home over the coming weeks.

Whilst there are limited options, we can still make an event over small things such as movie night.

Typically movie night snacks are not that great for us, but I have put a platter together of some homemade goodies for you to enjoy or replicate!

Spiced baked chickpeas

1 can or 250g cooked chickpeas

1 teaspoon cumin

3 teaspoon smoked paprika

1/4 teaspoon of salt

2 teaspoon coconut aminos

Put all ingredients in a bowl and mix well.

Spread out on oven tray and bake on 180 degrees C for 10 minutes, then toss and then bake for another 5-10 minutes.

Beetroot Hummus

1 beetroot

1 can chickpeas or 250gm cooked chickpeas

pinch of salt

1 lemon

1 Tablespoon tahini

3 Tablespoon of olive oil

Remove skin from beetroot and roast in oven for 1 hour

Once beetroot cooled, add all ingredients into food processor and pulse until all combined

Double Choc Cookies

150gm almond meal

2 Tablespoon cacao powder

3 Tablespoon olive oil

2 Tablespoon honey

1/2 teaspoon vanilla bean paste

30g dark chocolate pieces

Combine almond meal, cacao powder, olive oil, honey and vanilla paste and mix together.

Add 1-2 Tbs water if not forming a dough.

Add chocolate pieces.

Use your hands to form 12 cookies and place on baking tray.

Bake in oven on 130 degrees for 20 minutes.

Date Loaf

1 1/2 cups of wholemeal plain flour

1 1/2 teaspoon baking powder

2/3 cup coconut sugar

1 cup of pitted chopped dates

1/2 cup of roughly chopped walnuts

125gm butter

1/4 cup of almond milk

2 eggs

Add flour and baking powder into bowl. Add sugar, dates, walnuts and mix to combine.

Melt butter and milk on stovetop until just melted and add to dry ingredients.

Mix in eggs and stir until combined.

Spoon mixture into loaf tin and bake in oven for 1 hour at 160 degrees C.

Cool in tin then serve plain or with butter.

Popcorn Seasoning

We made the popcorn using our popcorn machine and then topped it with the following:

1 teaspoon of ground sugar

1 teaspoon cinnamon

1/4 teaspoon ground ginger

1/4 teaspoon ground cloves

The other additions to our platter included:

- corn chips

- strawberries

- cherry tomatoes

- carrot sticks

- plain almonds

Show me your version of your movie night platters!
